Hewn is a rustic, craft-driven bakery rooted in the art of naturally leavened sourdough.
Every loaf is shaped by hand, from carefully cultivated starters to long, slow fermentation, developing deep flavor, texture, and character that cannot be rushed.
We work with stone-milled grains and partner with local farmers to source the best seasonal ingredients. Our process is deliberate and time-honored: mixing, shaping, and scoring each loaf and pastry by hand before baking fresh each day. The result is bread with a living crust, an open crumb, and a story in every slice.
Our pastries are made with the same commitment to craft, using high-fat European butter to create exceptional flavor and delicate, layered texture. Croissants, brioche, and laminated doughs are hand-rolled and patiently developed, resulting in pastries that are rich, tender, and deeply satisfying.
At Hewn, baking is a practice grounded in patience, skill, and respect for the process. Every loaf and pastry reflects our belief that great food is not manufactured, but forged by hand.

Our bread selection rotates daily and consists of our country loaf, blonde country loaf, whole wheat seeded and rotating specialty loaves. Baguettes are available at all three locations around mid-morning-they are available on a first come, first served basis. Please note that this schedule is subject to change pending ingredient availability and/or certain holidays or events.

Join us at Hewn on Wednesday, April 29 at 6:30 PM for an evening in the bakehouse with Roxana Jullapat—baker, author, and co-owner of Friends & Family in Los Angeles.
Roxana and Ellen will share a conversation and live demo from Morning Baker: Recipes and Rituals for Breakfast and Beyond, offering a behind-the-scenes look at the morning bake, along with techniques and tips for working with heritage grains and seasonal ingredients.
