WHAT’s Baking
Stone Milled, Locally Sourced
Hewn uses organic flour and grains. We partner with several local farmers to source our ingredients. Our Libertyville and Winnetka Outpost offer a curated selection of items. Certain items, such as hot sandwiches and dutch crunch rolls are only available in Evanston and Winnetka. Cold Sandwiches are now available at all locations. Challah is available every Friday at 9am for walk-in sales at all locations. We suggest pre-ordering Challah online. Baguettes are available at all locations every day – they are usually out of the oven in Evanston by 9:30 am, and available at our Outposts by 10:30am.

Our bread selection rotates daily and consists of our country loaf, blonde country loaf, whole wheat seeded and rotating specialty loaves. Baguettes are available at all three locations around mid-morning-they are available on a first come, first served basis. Please note that this schedule is subject to change pending ingredient availability and/or certain holidays or events.
Our Breads
Made From Scratch

Country Bread
Naturally leavened country bread made with organic flours from Janie’s Mill and Central Milling. Baked every day.

Blonde Country
Our Country loaf with a lighter interior color. A Hewn fan favorite – also baked every day.

Polenta, Pumpkin Seed & Rosemary
Coarse Bloody Butcher polenta folded into country dough and layered with pumpkin seeds and rosemary.

Roasted Heirloom, Potato, Rosemary
Oven roasted potatoes folded into the country dough with fresh rosemary. Available during certain holidays.

Spelt Bread
A blend of Janie’s Mill whole grain spelt and Meadowlark sifted spelt. This bread has a nuttier flavor and higher protein content.

Challah
Braided bread served every Friday. Challah is first come, first served – or you can order plain or raisin two days in advance through our Tock site.

Cheddar Country
Five-year aged, yellow cheddar folded into the country dough and fermented overnight.

Picholine-Olive Country
Buttery Picholine olives folded into Country dough and sprinkled with Herbes de Provence.

Midwest Blend
A heritage blend of wheat varieties grown in Illinois and Wisconsin.

Whole Wheat Seeded
A 60% whole wheat with flax, chia, millet, pumpkin and sunflower seeds incorporated into the dough.

Evanston Red
A heritage variety of wheat grown and milled in Illinois.

Seasonal Loaf
Our Seasonal Loaves include Autumn Bread, Orchard Bread, Chocolate Cherry Bread and more.

Parmesan & Garlic Country
The Country Bread base with parmesan reggiano and roasted garlic.

Spent Grain Beer Bread
Our Country Dough infused with leftover grains used in the brewing process from local Evanston breweries.

Cranberry Walnut
Cranberries and walnuts mixed throughout our Country Bread.

Rye with Oats
Our Rye Bread topped with oats from Hazzard Free Farm.

Blonde Country Pan Loaf
Our Blonde Country Bread baked in a loaf pan.

Turkey Red
A heritage variety of wheat grown and stone-milled in Illinois. This bread includes 70% Turkey Red flour and 30% wheat flour. A hearty bread with a nutty flavor.

Ciabatta
Classic Ciabatta Loaf with a crispy crust and a chewy, airy crumb.

Durum
30% sifted durum and 40% Central Milling flour with toasted sesame seeds on the crust.

Baguette
A traditional Baguette, out of the oven by 10 am. Available in plain or seeded.

Holmenkollen Rye
100% stone milled Rye with sunflower, pumpkin, cracked rye, sesame and flax seeds.

Red Fife
A delicious and hearty heritage wheat.

Our breads contain allergens.
We take great care in preparing our products, however, please be aware that all of our products are made in a facility that uses, processes, and handles major allergens. All of the following major allergens are present and used throughout our bakery: Wheat, Milk, Eggs, Tree Nuts (such as almonds, walnuts, pecans, etc.), Peanuts, Soy, Sesame.

A selection of sandwiches, brownies and cookies are available every day. Cold and hot sandwiches are available in Evanston and Winnetka. Cold Sandwiches are available in Libertyville. Our current sandwich menu includes the following:
